Does Whole Foods Have Dry Aged Beef

Aged beef. $22.99/lb........... At Whole Foods.

Grilled tonight with regular Whole foods beef and some nice Wal-Mart steaks. No shock. The ridiculously overpriced steak was better. I wish I could dry age my own steaks.

what's stopping u? i've seen lots of techinques involved papertowels & stuff..does it really taste better to justify the difference between $6.99/lb at kroger for choice ribeyes?

Seriously, a good start would be to simply cease from buying any meat at Wal-Mart.

Unnecessary. A wire rack on a pan with a choice or better steak or whole cut is what you need. Tell the towel "heads" to themselves.

I know. This was purely for scientific purposes of comparison. I WAS surprised/disappointed at how good the Wal-Mart steaks came out. Must be my superior grill and technique.

otis..tell me more. i want to try this sometime..i buy ribeyes like chicklets..there's always 3 or 4 in my fridge..what do i need to do to attempt a dry-age?

Yes... To please family members I had to make all steaks damn near well done....

It was still damn juicy and tender. The wal mart steak got a little tough but not TOUGH.

Wire rack,baking pan(drip pan) underneath. Place the steaks...you need choice and/or whole cuts(filet,ribeye,strip are best)on the rack in the lower,coldest part of your fridge. Turn the meat every few days....take it out to a week and you'll noitice the difference in flavor and texture...go longer...like the fat white girls say, you'll never go back. I age most of mine.

There's a chance you might actually dislike it - grass-fed beef is extremely lean, and some folks can't get used to it.

But I have no doubts you'll at least say, "This is way, way different."

Not a fan. Grew up in the beef industry...raised 'em, fed 'em, showed 'em and slaughtered 'em through college. Still eating them...grass fed is a fad. Grain finished beef is much.much better by any reasonable criteria.

You can get prime steaks (not aged) at Costco for about the same price as choice at Kroger. Maybe not a s cheap as the Select stuff at Walmart...

I see you live in TX, so you probably have Costco nearby.

What do you look for or look out for? I mean, when do you know it is UNSAFE to eat?

And what is the peak time for aging beef like this? Whole foods does 22 days, but they have a dedicated fridge just for this. And I ASSUME safer conditions than a garage fridge. Which will be my method.

I've never gone past three weeks. It's dry aged for sure. If you use a whole cut, going further shouldn't be an issue.

i just ate 4 sirloin hamburger patties today that had a 'sell by feb 28' on them and they were gray and starting to smell a bit..

..nothing a few minutse on the ol' grill didn't cure.

eta i'll report back in the morning if i'm still alive.

What is your degree? Just a standard fridge temp? Do you open the fridge? OK to use the fridge for the beer that will live there as well and open it occasionally for said beer?
